This unusual cheese has a sweet flavour and a texture very like fudge. This is achieved by caremelising the surplus whey of cows' and goats' milk from butter-making, and then adding cream or more milk.

This cheese has a smooth, creamy texture, the cumin seeds lending it a strong, distinctly Indian flavour and aroma. The recipe dates back to the beginning of the Indonesian-European spice trade of the 17th century.

Similar to Emmental but sweeter and less nutty, Jarlsberg has a firm, supple texture and golden yellow colour. Its yellow paraffin coating and wide holes give it a distinctive appearance.

This cheese is matured slowly and carefully for 18 months, which brings out its unique full flavour - nutty, buttery and slightly sweet. It has a firm texture making it well disposed to slicing.
